Ingredients:

  • 1 cup rhubarb, chopped
  • 1 cup raspberries, fresh or frozen
  • 1/2 cup sugar
  • 1 tablespoon fresh thyme leaves, plus extra for garnish
  • 1 tablespoon fresh mint leaves, chopped
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions:

  1. In a medium saucepan, combine the chopped rhubarb, raspberries, sugar, thyme leaves, and lemon juice. Cook over medium heat until the rhubarb is soft and the mixture thickens, about 10-15 minutes. Remove from heat and let cool.
  2. In a separate bowl, whip the heavy cream with the vanilla extract until soft peaks form.
  3. Once the fruit mixture is cool, gently fold in the chopped mint leaves into the whipped cream.
  4. Layer the rhubarb-raspberry mixture in serving glasses, topping each layer with the mint cream. Repeat the layers until the glasses are full.
  5. Garnish with extra thyme leaves and a few whole raspberries on top. Chill in the refrigerator for at least 30 minutes before serving.
