Ingredients:

  • 2 cups fresh rhubarb, chopped
  • 1 cup granulated sugar
  • 1 cup water
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon vanilla extract
  • Juice of half a lemon

Instructions:

  1. In a medium saucepan, combine the chopped rhubarb, sugar, water, and grated ginger.
