Ingredients:

  • 200g dark chocolate (70% cocoa)
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup heavy cream
  • 1 cup fresh raspberries
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Mint leaves for garnish (optional)

Instructions:

  1. Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Remove from heat and let cool slightly.
  2. In a separate bowl, whisk the egg yolks with half of the sugar until pale and creamy. Stir in the melted chocolate and vanilla extract.
  3. In another bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and continue beating until stiff peaks form.
  4. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture, followed by the egg whites, being careful not to deflate the mixture.
  5. Once combined, spoon the mousse into serving glasses or bowls and refrigerate for at least 2 hours to set.
  6. Before serving, top with fresh raspberries and mint leaves for a touch of color and freshness.
