Ingredients:

  • 200g dark chocolate (70% cocoa or higher)
  • 300ml heavy cream or coconut cream for dairy-free
  • 3 tablespoons rose water
  • 2 tablespoons sugar (optional, adjust to taste)
  • 2 large egg whites
  • Pinch of salt
  • Fresh rose petals for garnish (optional)

Instructions:

  1. Melt the dark chocolate in a heatproof bowl over simmering water until smooth. Remove from heat and let cool slightly.
  2. In a separate bowl, whip the heavy cream (or coconut cream) until soft peaks form. Gently fold in the rose water and sugar.
  3. In another bowl, whisk the egg whites with a pinch of salt until stiff peaks form.
  4. Gently fold the melted chocolate into the whipped cream mixture until combined, then carefully fold in the egg whites until no streaks remain.
  5. Spoon the mousse into serving dishes and refrigerate for at least 2 hours to set.
  6. Before serving, garnish with fresh rose petals and a sprinkle of cocoa powder if desired.
