Ingredients:

  • 200g dark chocolate (70% cocoa)
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1/2 cup heavy cream
  • 2 tablespoons rose water
  • Pinch of salt
  • Edible rose petals (for garnish)
  • Fresh raspberries (for garnish)

Instructions:

  1. Melt the dark chocolate in a heatproof bowl over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.
  2. In a large mixing bowl, whisk the egg yolks and sugar together until pale and creamy. Gradually whisk in the melted chocolate and rose water until well combined.
  3. In another bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.
  4. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully incorporated.
  5. Spoon the mousse into serving glasses or ramekins and refrigerate for at least 2 hours, or until set.
