Ingredients:

  • 1 lb fresh okra, sliced
  • 2 cups ripe tomatoes, chopped
  • 1 large onion, diced
  • 1 bell pepper, diced (any color)
  • 1/4 cup fresh sassafras leaves, chopped
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the sliced okra and cook for about 5 minutes, stirring occasionally until slightly tender.
  4. Incorporate the chopped tomatoes, vegetable broth, smoked paprika, and dried thyme. Stir well to combine.
  5. Bring the mixture to a simmer, then reduce heat to low and cover. Let it cook for 20-25 minutes, stirring occasionally.
  6. Add the chopped sassafras leaves during the last 5 minutes of cooking. Season with salt and pepper to taste.
  7. Serve hot, garnished with additional fresh sassafras leaves if desired.
