Ingredients:

  • 2 cups basmati rice
  • 4 sausages (pork or chicken, sliced)
  • 1 can (14 oz) diced tomatoes
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 cup vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
  2. In a large pot, heat olive oil over medium heat. Add the cumin seeds and sauté for about 30 seconds until fragrant.
  3. Add the chopped onion, garlic, and ginger to the pot. Cook until the onion is translucent.
  4. Stir in the sliced sausages and cook for about 5 minutes until browned.
  5. Add the diced tomatoes (with juice), coriander powder, turmeric powder, garam masala, salt, and pepper. Stir well to combine.
  6. Add the vegetable broth and bring to a simmer. Allow to cook for 10 minutes, letting the flavors meld together.
  7. In a separate pot, cook the rinsed basmati rice according to package instructions. Typically, this involves boiling in water for about 15 minutes until tender.
  8. Once the rice is cooked, fluff it with a fork and serve it topped with the sausage and tomato curry. Garnish with fresh cilantro.
