Ingredients:

  • 1 cup white rice
  • 2 cups water
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup mushrooms, sliced
  • 1 medium onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Rinse the white rice under cold water until the water runs clear. In a pot, combine the rice and water, bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is cooked and water is absorbed. Fluff with a fork.
  2. While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and cook until they are soft and caramelized, about 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add another tablespoon of olive oil and increase the heat to medium-high. Add the sliced mushrooms and sauté until they are golden brown and tender, about 5 minutes. Season with garlic powder, salt, and pepper. Remove from the skillet and set aside with the onions.
  4. In the same skillet, add the chicken pieces and cook until browned and fully cooked, about 6-8 minutes. Add the soy sauce and stir to coat the chicken evenly. Return the onions and mushrooms to the skillet, mixing everything together for an additional 2-3 minutes.
  5. Serve the sautéed chicken with mushrooms and onions over a bed of white rice, garnished with fresh parsley.
