Ingredients:

  • 2 lbs beef bones (preferably with marrow)
  • 1 large onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, smashed
  • 10 cups water
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • 1 teaspoon salt
  • 1 sprig fresh thyme
  • 1 sprig fresh rosemary
  • 1 sprig fresh parsley

Instructions:

  1. Preheat the oven to 400°F (200°C). Roast the beef bones on a baking sheet for about 30 minutes until browned.
  2. In a large stock pot, add the roasted bones, onion, carrots, celery, garlic, and water.
  3. Bring the mixture to a boil, then reduce to a simmer. Add the bay leaf, peppercorns, and salt.
  4. Simmer for at least 4 hours, skimming off any foam or impurities that rise to the surface.
  5. Add the fresh herbs in the last hour of cooking to enhance the flavor.
  6. Once done, strain the broth through a fine-mesh sieve into a large bowl, discarding the solids. Let it cool before storing.
