Ingredients:

  • 2 boneless, skinless chicken breasts, diced
  • 4 large eggs
  • 1 bell pepper, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced chicken and season with salt, pepper, smoked paprika, and oregano. Cook for about 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
  3. Add the onion, bell pepper, and garlic to the skillet. Sauté for an additional 3-4 minutes until the vegetables are softened.
  4. Create four small wells in the chicken and vegetable mixture and crack an egg into each well.
  5. Cover the skillet and cook for about 5 minutes, or until the egg whites are set but the yolks are still runny. For firmer yolks, cook for an additional 2-3 minutes.
  6. Remove from heat, garnish with fresh parsley, and serve warm.
