Ingredients:

  • 1 chicken breast, diced
  • 2 fresh tomatoes, diced
  • 1 cup fresh mushrooms, sliced
  • 1 cup white rice
  • 1 red pepper, diced
  • 1 bay leaf
  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 cups chicken broth or water
  • Salt and pepper to taste

Instructions:

  1. In a large skillet or saucepan, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the diced chicken breast and cook until browned on all sides.
  3. Stir in the diced tomatoes, sliced mushrooms, and diced red pepper. Cook for about 5 minutes until the vegetables are slightly softened.
  4. Add the rice, bay leaf, and chicken broth (or water). Bring to a boil, then reduce the heat to low and cover the pan.
  5. Simmer for about 18-20 minutes, or until the rice is tender and has absorbed the liquid. Remove the bay leaf.
  6. Season with salt and pepper to taste before serving.
