Ingredients:

  • 1 cup chicken mince
  • 2 cups fresh spinach, chopped
  • 1 cup sweet potatoes, diced
  • 1 cup canned tomatoes, drained
  • 1 cup beans, drained and rinsed
  • 1 egg
  • 1/2 cup cheese, grated
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions:

  1. In a large skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and cook for about 5-7 minutes, or until they begin to soften.
  2. Add the minced garlic, chicken mince, paprika, cumin, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  3. Stir in the canned tomatoes and beans, cooking for an additional 3-4 minutes until heated through.
  4. Add the chopped spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat and stir in the grated cheese until melted.
  5. In a separate pan, fry the egg to your liking (sunny-side up or over-easy).
  6. Serve the chicken and spinach hash on plates, topped with the fried egg and garnished with fresh herbs if desired.
