Ingredients:

  • 2 chicken breasts, cut into bite-sized pieces
  • 1 cup rice
  • 1 can chopped tomatoes
  • 2 fresh tomatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons soy sauce
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the chicken pieces to the skillet and season with salt and pepper. Cook until browned, about 5-6 minutes.
  5. Stir in the fresh tomatoes, chopped tomatoes, Worcestershire sauce, and soy sauce. Mix well and let it simmer for 2-3 minutes.
  6. Add the rice and chicken broth to the skillet. Bring to a boil, then reduce the heat to low and cover. Cook for about 18-20 minutes, or until the rice is tender and has absorbed the liquid.
  7. Remove from heat and let it sit covered for an additional 5 minutes.
  8. Fluff the rice with a fork, garnish with fresh basil if desired, and serve warm.
