Ingredients:

  • 1 cup jasmine rice
  • 2 cups water
  • 2 boneless, skinless chicken thighs
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt and pepper to taste
  • 2 eggs
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions:

  1. Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rice and water, bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Fluff the rice with a fork and set aside.
  2. In a bowl, mix the soy sauce, sesame oil, garlic powder, ginger powder, salt, and pepper. Add the chicken thighs and marinate for at least 30 minutes.
  3. Heat a skillet over medium heat. Add the marinated chicken and cook for about 6-7 minutes on each side or until fully cooked and golden brown. Remove from heat and let rest for a few minutes before slicing.
  4. In the same skillet, add a little oil if needed and fry the eggs sunny-side up until the whites are set but the yolks are still runny.
  5. To assemble, place a serving of rice in a bowl, top with sliced chicken, a fried egg, and garnish with sliced green onions and sesame seeds.
