Ingredients:

  • 4 chicken thighs, skinless and boneless
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 cup shelled edamame, cooked
  • 2 cups mixed salad greens
  • 1 orange, segmented
  • 1 grapefruit, segmented
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon rice vinegar
  • Salt and pepper, to taste
  • Sesame seeds, for garnish

Instructions:

  1. In a bowl, whisk together soy sauce, garlic, ginger, honey, and sesame oil. Add chicken thighs and marinate for at least 30 minutes.
  2. Preheat grill or grill pan over medium-high heat. Remove chicken from marinade and grill for about 6-7 minutes on each side or until fully cooked.
  3. In a large bowl, combine mixed greens, edamame, orange segments, grapefruit segments, and red onion.
  4. In a small bowl, whisk together olive oil, rice vinegar, salt, and pepper. Drizzle over the salad and toss gently to combine.
