Ingredients:

  • 4 turkey wings
  • 1 can (14 oz) coconut milk
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tsp thyme
  • 2 tbsp olive oil
  • 4 medium potatoes, peeled and diced
  • 1 cup vegetable broth
  • 1 cup black-eyed peas, cooked
  • 1 cup corn, fresh or frozen
  • 1 cup diced tomatoes
  • 1 tbsp cilantro, chopped

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the coconut milk, chopped onion, bell pepper, garlic, paprika, black pepper, salt, and thyme. Mix well.
  3. Add the turkey wings to the bowl and coat them evenly with the coconut mixture. Let marinate for at least 30 minutes.
  4. Transfer the turkey wings to a baking dish and pour the remaining marinade over them. Cover with foil and bake for 1 hour.
  5. Meanwhile, in a saucepan, heat the olive oil over medium heat. Add the diced potatoes and sauté for about 5 minutes.
  6. Add the vegetable broth to the potatoes, cover, and simmer until tender, about 15-20 minutes. Mash slightly for a creamy texture.
  7. In another pan, combine the cooked black-eyed peas, corn, diced tomatoes, and cilantro. Stir and heat through for about 5-7 minutes.
  8. After 1 hour, remove the foil from the turkey wings and bake for an additional 15-20 minutes, or until they are golden and cooked through.
  9. Serve the turkey wings alongside the creamy stewed potatoes and black-eyed peas succotash.
