Ingredients:

  • 2 cups cooked rice (preferably day-old)
  • 3 large eggs, beaten
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1/2 teaspoon black pepper
  • 2 green onions, sliced
  • 1 tablespoon olive oil

Instructions:

  1. In a large skillet or wok, heat the olive oil over medium-high heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Pour in the beaten eggs and scramble them until fully cooked. Remove from the skillet and set aside.
  4. In the same skillet, add the cooked rice and stir-fry for 2-3 minutes until heated through.
  5. Add the chopped spinach and continue to stir-fry until wilted.
  6. Return the scrambled eggs to the skillet and mix well with the rice and spinach.
  7. Add the soy sauce, sesame oil, black pepper, and crumbled feta cheese. Stir until everything is well combined and heated through.
