Ingredients:

  • 2 cups fresh fish fillets (such as cod or haddock)
  • 1 cup milk
  • 2 tablespoons all-purpose flour
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Fresh parsley for garnish

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking until translucent.
  2. Stir in the sliced carrots and cook for another 5 minutes.
  3. Sprinkle flour over the vegetables and stir to coat. Cook for 2 minutes to remove the raw flour taste.
  4. Slowly add the vegetable broth while stirring to avoid lumps. Bring to a simmer.
  5. Add the milk, salt, pepper, thyme, and bay leaf. Stir well and let simmer for about 10 minutes.
  6. Gently add the fish fillets to the pot, cooking until they are opaque and cooked through, about 5-7 minutes.
  7. Remove the bay leaf and garnish with fresh parsley before serving.
