Ingredients:

  • 10 kg ground pork
  • 50 g dried sage
  • 25 g fennel seeds
  • 30 g dried thyme
  • 25 g dried marjoram
  • 10 g red chili flakes
  • 20 g black pepper
  • 50 g salt
  • 30 g onion powder
  • 30 g garlic powder
  • 100 g brown sugar
  • 100 ml maple syrup
  • 50 g paprika
  • 25 g dried oregano

Instructions:

  1. In a large mixing bowl, combine all the dry ingredients: sage, fennel seeds, thyme, marjoram, red chili flakes, black pepper, salt, onion powder, garlic powder, paprika, and oregano.
  2. Add the ground pork to the bowl with the dry ingredients.
  3. Drizzle the brown sugar and maple syrup over the meat mixture.
  4. Using your hands or a large spoon, mix everything thoroughly until the spices are evenly distributed throughout the pork.
  5. Once well-mixed, you can either stuff the mixture into sausage casings or form it into patties.
  6. If making patties, preheat a skillet over medium heat and cook the patties for about 5-7 minutes on each side or until fully cooked.
  7. If using casings, follow the appropriate method for stuffing and then cook the sausages in a skillet or grill until browned and cooked through.
