Ingredients:

  • 1 lb chicken breast, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup plain yogurt
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon lemon zest

Instructions:

  1. In a bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper to create a marinade.
  2. Add the chicken cubes to the marinade, tossing well to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. While the chicken is marinating, prepare the lemon-garlic yogurt sauce by mixing plain yogurt, parsley, dill, lemon zest, and a pinch of salt in a separate bowl. Set aside in the refrigerator.
  4. Preheat the grill to medium-high heat. Thread the marinated chicken onto skewers.
  5. Grill the chicken skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  6. Serve the chicken skewers hot with the lemon-garlic yogurt sauce on the side.
