Ingredients:

  • 1 cup cooked quinoa
  • 1/2 cup grated parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup finely chopped spinach
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil for frying

Instructions:

  1. In a large bowl, combine the cooked quinoa, grated parmesan cheese, breadcrumbs, eggs, chopped spinach, onion, garlic, parsley, basil, salt, pepper, and paprika. Mix until well combined.
  2. Shape the mixture into small cakes, about 2-3 inches in diameter.
  3. Heat olive oil in a non-stick skillet over medium heat. Once hot, add the quinoa cakes to the skillet.
  4. Cook for about 4-5 minutes on each side, or until golden brown and crispy.
  5. Remove from skillet and place on a paper towel to absorb excess oil. Serve warm.
