Ingredients:

  • 1 pound ground beef (80/20 blend)
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 whole wheat burger buns
  • 1 cup arugula or spinach
  • 1 large tomato, sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Olive oil for grilling

Instructions:

  1. In a large bowl, combine the ground beef, parsley, thyme, rosemary, garlic powder, salt, and pepper. Mix gently until just combined.
  2. Form the mixture into 4 equal patties, making a slight indentation in the center of each to prevent puffing during cooking.
  3. Preheat your grill or skillet over medium-high heat. Lightly oil the grill grates or skillet.
  4. Cook the patties for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached.
  5. While the burgers are cooking, prepare the garlic aioli by whisking together the mayonnaise, minced garlic, lemon juice, and a pinch of salt in a small bowl.
  6. Toast the whole wheat burger buns on the grill or in a toaster until golden brown.
  7. Assemble the burgers by spreading a generous amount of garlic aioli on the bottom half of each bun. Top with arugula, a burger patty, tomato slices, and red onion. Finish with the top half of the bun.
  8. Serve immediately and enjoy!
