Ingredients:

  • 1 cup green or brown lentils, rinsed
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 2 leeks, cleaned and sliced
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 carrots, diced
  • 1 bay leaf
  • Fresh parsley for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and leeks, and sauté until they are soft and translucent, about 5-7 minutes.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Stir in the diced carrots, lentils, thyme, smoked paprika, and bay leaf. Mix well.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 25-30 minutes, or until the lentils are tender.
  5. Season with salt and pepper to taste. Remove the bay leaf before serving.
  6. Serve hot, garnished with fresh parsley.
