Ingredients:

  • 1 cup green or brown lentils, rinsed
  • 4 cups vegetable broth
  • 2 cups fresh spinach, roughly chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Fresh parsley for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté until softened, about 5 minutes.
  2. Stir in the minced garlic, smoked paprika, and ground cumin, cooking for an additional minute until fragrant.
  3. Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the lentils are tender.
  4. Stir in the chopped spinach and lemon juice, cooking for another 5 minutes until the spinach is wilted. Season with salt and pepper to taste.
