Ingredients:

  • 1 cup green or brown lentils, rinsed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and garlic, and sauté until softened.
  2. Add the diced carrot, celery, and bell pepper, cooking for another 5 minutes until the vegetables begin to soften.
  3. Stir in the zucchini, diced tomatoes, lentils, vegetable broth, cumin, smoked paprika, turmeric, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for about 25-30 minutes, or until the lentils are tender.
  5. Once cooked, stir in the lemon juice and adjust seasoning if necessary.
  6. Serve hot, garnished with fresh parsley.
