Ingredients:

  • 1 lb minced beef or chicken
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cups broccoli florets
  • 1 cup mushrooms, sliced
  • 1 large carrot, julienned
  • 2 cups fresh spinach
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon soy sauce (optional for added flavor)

Instructions:

  1. Heat olive oil in a large skillet or wok over medium heat.
  2. Add the diced onions and minced garlic, sautéing until translucent and fragrant.
  3. Increase heat to medium-high and add the minced meat, cooking until browned and fully cooked, breaking it apart as it cooks.
  4. Stir in the sliced mushrooms and carrots, cooking for about 3-4 minutes until the vegetables begin to soften.
  5. Add the broccoli florets, stirring frequently for another 3-4 minutes until they are tender but still bright green.
  6. Mix in the fresh spinach and chopped basil, cooking until the spinach wilts.
  7. Season with salt, pepper, and soy sauce if desired. Stir well to combine all ingredients.
  8. Serve hot, either on its own or over a bed of rice or quinoa.
