Ingredients:

  • 4 bone-in pork chops
  • 1 cup rice
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup chicken broth
  • 1 cup corn (fresh or frozen)
  • 1/2 cup milk
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Fresh parsley for garnish

Instructions:

  1. Season the pork chops with salt, pepper, paprika, and Italian seasoning on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, add diced onion and garlic. Sauté until the onion is translucent.
  4. Add the rice to the skillet and stir to coat with the oil and onion mixture.
  5. Pour in the diced tomatoes (with juice), chicken broth, and corn. Stir well and bring to a simmer.
  6. Return the pork chops to the skillet, nestling them into the rice mixture. Cover and cook on low heat for about 20 minutes, or until the rice is tender and the pork is cooked through.
  7. Stir in the milk for creaminess, adjust seasoning with salt and pepper if needed, and cook for an additional 5 minutes.
  8. Garnish with fresh parsley before serving.
