Ingredients:

  • 2 chicken breasts
  • 2 cups pumpkin, diced
  • 1 cup uncooked rice (white or brown)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the diced pumpkin with olive oil, salt, pepper, cumin, and paprika. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. While the pumpkin is roasting, cook the rice according to package instructions.
  4. In a skillet, heat a little olive oil over medium heat. Sauté the onion and garlic until translucent.
  5. Add the chicken breasts to the skillet, season with salt and pepper, and cook for about 5-7 minutes on each side or until fully cooked.
  6. Once the chicken is cooked, remove from the skillet and let it rest for a few minutes before slicing.
  7. To assemble, place a serving of rice in a bowl, top with roasted pumpkin, sliced chicken, and garnish with fresh parsley or cilantro.
