Ingredients:

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup green peas (fresh or frozen)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
  3. While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Add the diced carrot, bell pepper, and zucchini to the skillet. Sauté the vegetables for about 5-7 minutes until tender.
  6. Mix in the green peas and dried thyme, and cook for another 2-3 minutes.
  7. Fluff the cooked quinoa with a fork and add it to the skillet with the sautéed vegetables. Stir to combine and season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.
