Ingredients:

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 2 cups fresh spinach
  • 4 large eggs
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Red pepper flakes (optional, for heat)

Instructions:

  1. Rinse the quinoa under cold water, then combine it with water or vegetable broth in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and liquid is absorbed.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper.
