Ingredients:

  • 1 cup red lentils, rinsed
  • 2 medium zucchinis, diced
  • 2 cups diced tomatoes (fresh or canned)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon turmeric
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the ground cumin, smoked paprika, and turmeric. Cook for another minute to toast the spices.
  4. Add the diced zucchini and cook for about 5 minutes until they soften slightly.
  5. Add the rinsed red lentils and diced tomatoes to the pot, then pour in the vegetable broth.
  6. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 25-30 minutes, or until the lentils are tender.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley or cilantro.
