Ingredients:

  • 1 cup rice
  • 1 can black beans, drained and rinsed
  • 2 cups broccoli florets
  • 1 pound chicken breast, grilled and sliced
  • 2 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup milk
  • 1/2 cup juice (orange or apple)

Instructions:

  1. In a medium saucepan, heat olive oil over medium heat. Add rice and sauté for 2-3 minutes until slightly toasted.
  2. Add chicken broth, garlic powder, onion powder, cumin, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until rice is cooked.
  3. While the rice is cooking, steam the broccoli until tender, about 5-7 minutes.
  4. In a separate pot, heat the black beans over low heat until warmed through. Add a splash of milk for creaminess and stir well.
  5. Once the rice is done, fluff it with a fork and mix in the black beans and steamed broccoli.
  6. Serve the rice and beans mixture topped with sliced grilled chicken. Drizzle with a little extra olive oil if desired.
  7. Pair this dish with a refreshing glass of juice.
