Ingredients:

  • 1 cup rice
  • 1 can chickpeas, drained and rinsed
  • 1/2 lb ground pork
  • 1 large carrot, diced
  • 2 stalks celery, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups chicken or vegetable broth
  • Fresh parsley for garnish

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add onions and garlic, sauté until translucent.
  2. Add the ground pork to the skillet, breaking it apart as it cooks. Season with salt, pepper, cumin, and paprika.
  3. Once the pork is browned, stir in the diced carrots and celery, cooking for an additional 5 minutes until softened.
  4. Add the rice to the skillet, stirring well to combine with the pork and vegetables.
  5. Pour in the broth and bring the mixture to a boil. Reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
  6. Stir in the chickpeas and heat through for an additional 2-3 minutes.
  7. Serve warm, garnished with fresh parsley.
