Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup ice water
  • 3 large eggs
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup fresh spinach, chopped
  • 1 cup shredded cheese (such as Gruyère or cheddar)
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. Stir in the ice water, a tablespoon at a time, until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes.
  4. Roll out the dough on a floured surface and fit it into a 9-inch pie pan. Trim the edges and prick the bottom with a fork. Pre-bake the crust for 10 minutes.
  5. In a large bowl, whisk together the eggs, heavy cream, milk, nutmeg, salt, and pepper.
  6. Stir in the chopped spinach and shredded cheese.
  7. Pour the filling into the pre-baked crust and bake for 30-35 minutes, or until the filling is set and lightly golden.
  8. Let it cool for a few minutes before slicing and serving.
