Ingredients:

  • 1 block firm tofu, drained and pressed
  • 2 cups green cabbage, shredded
  • 1 green bell pepper, sliced
  • 1 cup mushrooms, sliced (shiitake or button)
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup (or agave syrup)
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)
  • Chopped green onions for garnish (optional)

Instructions:

  1. Cut the pressed tofu into bite-sized cubes.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the tofu cubes and stir-fry until golden brown on all sides, about 5-7 minutes. Remove tofu from the pan and set aside.
  4. In the same pan, add the sesame oil, garlic, and ginger, sautéing for about 30 seconds until fragrant.
  5. Add the sliced green bell pepper and mushrooms to the pan, stir-frying for 3-4 minutes until they begin to soften.
  6. Add the shredded cabbage and continue to stir-fry for another 2-3 minutes until the cabbage wilts.
  7. Return the browned tofu to the pan and pour in the soy sauce, rice vinegar, and maple syrup. Stir well to combine all ingredients and heat through for another 2 minutes.
  8. Season with salt and pepper to taste. Serve hot, garnished with sesame seeds and chopped green onions if desired.
