Ingredients:

  • 1 lb boneless, skinless chicken thighs
  • 2 cups tomato soup
  • 1 cup brown rice
  • 2 cups chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a medium saucepan, cook the brown rice according to package instructions using chicken broth instead of water for added flavor.
  2. While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
