Ingredients:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup breadcrumbs, toasted
  • 1/2 cup chopped walnuts or pecans
  • 1 cup custard (homemade or store-bought)
  • Powdered sugar for dusting

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, sift together the flour, baking powder, and salt. Gradually add this to the butter mixture, alternating with the milk. Mix until just combined.
  5. Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely.
  6. While the cakes are cooling, prepare the 'sawdust' topping by mixing the toasted breadcrumbs and chopped nuts in a bowl.
  7. Once the cakes are cool, place one layer on a serving plate. Spread a layer of custard on top, then place the second cake layer on top.
  8. Spread the remaining custard on the top layer and generously sprinkle the breadcrumb-nut mixture over it, pressing lightly to adhere.
  9. Dust with powdered sugar before serving.
