Ingredients:

  • 500g potatoes, peeled and diced
  • 100g pea protein powder
  • 1 cup frozen peas, thawed
  • 1 medium carrot, grated
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons flaxseeds, ground
  • 2 tablespoons sunflower seeds
  • 1 teaspoon dried dill
  • Salt and pepper to taste
  • Olive oil for frying

Instructions:

  1. Boil the diced potatoes in salted water until tender, about 15 minutes. Drain and let cool slightly.
  2. In a large mixing bowl, mash the boiled potatoes until smooth.
  3. Add the pea protein powder, thawed peas, grated carrot, chopped onion, minced garlic, ground flaxseeds, sunflower seeds, dried dill, salt, and pepper to the mashed potatoes. Mix until well combined.
  4. Shape the mixture into small balls, about the size of a golf ball.
  5. Heat olive oil in a frying pan over medium heat. Fry the potato balls until golden brown and crispy on all sides, about 4-5 minutes per side.
  6. Remove from the pan and place on paper towels to drain excess oil. Serve warm.
