Ingredients:

  • 1 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1/2 cup heavy cream
  • 1/4 cup light corn syrup
  • 1/2 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips

Instructions:

  1. In a medium saucepan, combine the sugar, corn syrup, and butter over medium heat. Stir until the sugar dissolves and the mixture begins to boil.
  2. Allow the mixture to boil without stirring until it reaches a deep amber color (about 300°F or 150°C on a candy thermometer).
  3. Remove from heat and carefully stir in the heavy cream (it will bubble vigorously).
  4. Add the sea salt and vanilla extract, stirring until fully incorporated.
  5. Pour the caramel into a parchment-lined 8x8 inch baking dish. Let it cool at room temperature for about 2 hours until set.
  6. Once set, cut the caramels into small squares.
  7. Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  8. Drizzle the melted chocolate over the caramel squares and let it set before serving.
