Ingredients:

  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound scallops, cleaned
  • 1 cup green peas, fresh or frozen
  • 1 red bell pepper, diced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, combine the brown rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 40-45 minutes or until the rice is tender and the liquid is absorbed.
  2. While the rice is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shrimp and scallops to the skillet, cooking for about 3-4 minutes until they turn opaque and are cooked through. Season with salt, pepper, and lemon zest.
  4. Stir in the diced red bell pepper and green peas, cooking for an additional 2-3 minutes until the vegetables are tender but still vibrant.
  5. Once the rice is cooked, fluff it with a fork and then combine it with the seafood and vegetable mixture in the skillet. Toss gently to combine all ingredients.
  6. Remove from heat, sprinkle with fresh parsley, and adjust seasoning if necessary. Serve warm.
