Ingredients:

  • 500g pork belly, cut into bite-sized pieces
  • 200g udon noodles
  • 2 cups pak choi, chopped
  • 1 tablespoon rice vinegar
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon mirin
  • 2 tablespoons honey
  • 1 tablespoon ginger, minced
  • 1 small chili, sliced
  • 1/4 cup coriander, chopped
  • 1/2 cup beansprouts
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

Instructions:

  1. In a bowl, mix together soy sauce, fish sauce, sesame oil, rice vinegar, mirin, honey, ginger, and sliced chili to create the marinade.
  2. Add the pork belly pieces to the marinade and let them sit for at least 30 minutes (or overnight for more flavor).
  3. Cook the udon noodles according to package instructions, then drain and set aside.
  4. In a large skillet or wok, heat a bit of oil over medium-high heat. Add the marinated pork belly and cook until crispy and cooked through, about 8-10 minutes.
  5. Add the chopped pak choi to the skillet and stir-fry for an additional 2-3 minutes until just wilted.
  6. Add the cooked udon noodles to the skillet and toss everything together until well combined and heated through.
