Ingredients:

  • 8 oz pasta (your choice)
  • 1 lb shrimp, peeled and deveined
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup green peas (fresh or frozen)
  • 2 cups fresh spinach, chopped
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Red pepper flakes (optional, for a kick)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes. Season with salt, pepper, and red pepper flakes if using.
  4. Stir in the corn and peas, cooking for an additional 2-3 minutes until heated through.
  5. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and combined.
  6. Add the chopped spinach and cooked pasta to the skillet, tossing to coat everything in the creamy sauce. Cook for another 2-3 minutes until the spinach wilts.
