Ingredients:

  • 1 block silken tofu, drained and cubed
  • 2 medium zucchinis, sliced into half-moons
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon chili flakes (optional)
  • 1 green onion, sliced for garnish
  • Sesame seeds for garnish

Instructions:

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
  3. Add the sliced zucchini to the skillet and stir-fry for about 3-4 minutes until slightly tender but still crisp.
  4. Gently add the cubed silken tofu to the skillet, being careful not to break it apart.
  5. Pour in the soy sauce, rice vinegar, and sesame oil, and gently toss everything together to combine.
  6. If using, sprinkle in the chili flakes and stir gently for another minute to heat through.
  7. Remove from heat and garnish with sliced green onions and sesame seeds before serving.
