Ingredients:

  • 4 gelatin sheets
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • Fresh mint leaves for garnish

Instructions:

  1. Soak the gelatin sheets in ice water for exactly 5 minutes.
  2. In a saucepan, combine the heavy cream, whole milk, and granulated sugar. Heat over medium heat until the mixture is warm and sugar is dissolved, but do not let it boil.
  3. Remove the saucepan from heat and stir in the vanilla extract.
  4. Remove the gelatin sheets from the ice water, squeeze out excess water, and add them to the warm cream mixture. Stir until completely dissolved.
  5. Pour the mixture into small glass bowls and let it cool to room temperature.
  6. Refrigerate the bowls for at least 2 hours, or until set.
  7. Once set, gently press fresh raspberries into the surface, allowing them to slightly sink for a marble effect.
  8. Garnish each pudding with a few mint leaves before serving.
