Ingredients:

  • 1 pound alligator meat, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying
  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon hot sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon cayenne pepper
  • 1 tablespoon chopped fresh parsley

Instructions:

  1. In a bowl, marinate the alligator pieces in buttermilk for at least 1 hour in the refrigerator.
  2. In a separate bowl, combine flour, Cajun seasoning, paprika, garlic powder, onion powder, salt, and black pepper.
  3. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  4. Remove alligator from buttermilk and dredge each piece in the seasoned flour, shaking off excess.
  5. Fry the alligator pieces in batches until golden brown and cooked through, about 3-4 minutes per batch. Drain on paper towels.
  6. For the spicy remoulade, whisk together mayonnaise, Dijon mustard, Worcestershire sauce, hot sauce, lemon juice, cayenne pepper, and parsley in a bowl until smooth.
  7. Serve the fried gator hot with the spicy remoulade on the side.
