Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons vegetable oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons all-purpose flour
  • Cooked rice or mashed potatoes, for serving

Instructions:

  1. Season the chicken thighs with salt, black pepper, and paprika.
  2. In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken thighs, skin-side down, and sear until golden brown, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the diced onion and garlic. Sauté until softened, about 3-4 minutes.
  4. Sprinkle the flour over the onions and garlic, stirring to combine. Cook for 1-2 minutes to remove the raw flour taste.
  5. Gradually whisk in the chicken broth and heavy cream, ensuring there are no lumps. Bring the mixture to a simmer.
  6. Add the fresh thyme, rosemary, parsley, and Worcestershire sauce. Stir to combine.
  7. Return the chicken to the skillet, skin-side up. Cover and reduce the heat to low. Let simmer for 25-30 minutes, or until the chicken is cooked through and tender.
  8. Serve the smothered chicken over cooked rice or mashed potatoes, drizzling the herb gravy generously over the top.
