Ingredients:

  • 200g spaghetti
  • 100g pistachio paste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Salt to taste
  • Freshly cracked black pepper to taste
  • Parmesan cheese for serving (optional)
  • Chopped fresh parsley for garnish

Instructions:

  1. Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in the pistachio paste, lemon zest, and lemon juice. Mix well and add some reserved pasta water to create a creamy sauce. Adjust the consistency as needed.
  4. Add the drained spaghetti to the skillet, tossing to coat in the sauce. Season with salt and freshly cracked black pepper to taste.
  5. Serve immediately, garnished with grated Parmesan cheese and chopped parsley.
