Ingredients:

  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium tomato, diced
  • 1 red bell pepper, roasted and chopped
  • 1 green bell pepper, diced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon saffron threads
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions:

  1. In a medium saucepan, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.
  2. Add minced garlic and sauté for an additional minute until fragrant.
  3. Stir in the rice and toast for about 2 minutes, allowing it to absorb the oil and flavors.
  4. Add the vegetable broth, diced tomato, roasted bell pepper, green bell pepper, smoked paprika, cumin, saffron, salt, and pepper. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork.
  7. Stir in the lime juice and garnish with fresh cilantro before serving.
