Ingredients:

  • 1 cup cooked black beans
  • 1 cup cooked quinoa
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, sliced
  • Fresh salsa (for topping, optional)

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the bell pepper and cook for another 3-4 minutes until softened.
  4. Sprinkle in the cumin, smoked paprika, chili powder, salt, and black pepper, stirring to combine and cook for 1-2 minutes to toast the spices.
  5. Add the cooked black beans and quinoa to the skillet, stirring to combine all ingredients. Cook until heated through, about 5 minutes.
  6. Remove from heat and stir in the lime juice and chopped cilantro.
  7. Serve the mixture in bowls, topped with sliced avocado and fresh salsa if desired.
