Ingredients:

  • 2 chicken breasts, diced
  • 1 cup rice (white or brown)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 yellow onion, diced
  • 1 green pepper, diced
  • 1 cup kale, chopped
  • 2 carrots, sliced
  • 1 can diced tomatoes (14 oz)
  • 2 celery stalks, diced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/2 cup chicken broth or water

Instructions:

  1. In a bowl, combine diced chicken with paprika, cumin, black pepper, salt, and chili powder. Let it marinate for at least 15 minutes.
  2. In a large pot, heat olive oil over medium heat. Add minced garlic and diced onion, sautéing until the onion becomes translucent.
  3. Add the marinated chicken to the pot and cook until browned on all sides.
  4. Stir in the diced green pepper, sliced carrots, and diced celery. Cook for about 5 minutes until the vegetables start to soften.
  5. Add the chopped kale and canned diced tomatoes (with their juice) to the pot. Stir well and cook for another 3-4 minutes.
  6. In a separate pot, cook the rice according to package instructions. Use chicken broth instead of water for added flavor.
  7. Once the rice is cooked, serve the chicken and vegetable mixture over a bed of rice. Enjoy your flavorful and nutritious meal!
